Turkey Bolognese with Sweet Potato Noodles
Total time: 30 minutes
1 teaspoon olive oil
2-3 sweet potatoes spiralized
1 yellow onion diced
3 cloves minced garlic
1 lb. ground turkey or grass-fed beef (make this vegan with using tofu, tempeh, or lentils)
1/3 cup sun-dried tomatoes
1 jar of your favorite tomato sauce (I love Rao’s Homemade tomato sauce) *Tip: Make sauce creamier by blending for 2-3 minutes.
Heat a pan with olive oil
Add onion and cook for 5-10 minutes
Add garlic and cook until fragrant
Add ground turkey and sauté until browned
Add tomato sauce and sun-dried tomatoes.
Cook for 5-10 minutes
Heat another skillet with a little olive oil
Add sweet potato noodle and cook for 2-3 minutes
Serve sauce on top and enjoy!
