Turkey Bolognese with Sweet Potato Noodles


Serves 4 

Total time: 30 minutes 

Ingredients 

  • 1 teaspoon olive oil

  • 2-3 sweet potatoes spiralized

  • 1 yellow onion diced 

  • 3 cloves minced garlic 

  •  1 lb. ground turkey or grass-fed beef (make this vegan with using tofu, tempeh, or lentils)

  • 1/3 cup sun-dried tomatoes

  • 1 jar of your favorite tomato sauce (I love Rao’s Homemade tomato sauce) *Tip: Make sauce creamier by blending for 2-3 minutes. 

Directions 

  • Heat a pan with olive oil

  • Add onion and cook for 5-10 minutes 

  • Add garlic and cook until fragrant 

  • Add ground turkey and sauté until browned

  • Add tomato sauce and sun-dried tomatoes. 

  • Cook for 5-10 minutes 

  • Heat another skillet with a little olive oil

  • Add sweet potato noodle and cook for 2-3 minutes 

  •  Serve sauce on top and enjoy!
