Garden Cucumber Salad

Serves 2 

Total Time 15 minutes 

Ingredients 

  • 2 medium cucumbers 

  • 1 medium carrot

  • 1/4 cup blueberries 

  • 1/4 sliced almonds 

  • 1 tablespoon red wine vinegar 

  • 1 tablespoon olive oil 

  • 1 teaspoon honey or maple syrup 

Directions 

  • Spiralize or cut cucumbers and carrots thinly

  • In a small bowl combined red wine vinegar, olive oil, and honey. Season with salt and pepper.

  • In a medium bowl add the cucumbers, carrots, almonds, and blueberries. 

  • Pour dressing over salad and enjoy!
