Garden Cucumber Salad
Total Time 15 minutes
2 medium cucumbers
1 medium carrot
1/4 cup blueberries
1/4 sliced almonds
1 tablespoon red wine vinegar
1 tablespoon olive oil
1 teaspoon honey or maple syrup
Spiralize or cut cucumbers and carrots thinly
In a small bowl combined red wine vinegar, olive oil, and honey. Season with salt and pepper.
In a medium bowl add the cucumbers, carrots, almonds, and blueberries.
Pour dressing over salad and enjoy!
